A great way to get your 5-a-day into your dinner.
Ingredients
150g sweetcorn kernels (canned or fresh)
1 medium courgette (grated)
130g all-purpose flour
2 large eggs
120ml milk
50g grated cheese (cheddar or preferred)
30g fresh parsley (chopped)
5g baking powder
2g salt
1g black pepper
Olive oil spray for cooking
Instructions
In a large bowl, combine the sweetcorn, grated courgette, flour, baking powder, salt, and pepper.
In a separate bowl, whisk the eggs and milk together until well combined. Add this mixture to the dry ingredients and stir until it forms a smooth batter.
Fold in the grated cheese and chopped parsley until evenly distributed throughout the batter.
Preheat the air fryer to 200°C (390°F).
Using a spoon or small scoop, drop spoonfuls of the batter into the air fryer basket, leaving a small gap between each fritter. Lightly spray with olive oil.
Cook the fritters in the air fryer for about 5-7 minutes per side, or until golden brown and cooked through.
Repeat until all the batter is used. Serve the fritters warm.
Notes
To make these fritters gluten-free, substitute the all-purpose flour with a gluten-free flour blend. For extra flavour, add a pinch of chilli flakes or a handful of chopped spring onions.
